Ingredients
2
lbs.
of pork loin
2 1/2
teaspoons
ground salt
use 1/2 tea-spoon more if sea salt
2
teaspoons
of oregano or oregano flakes
1
teaspoon
of parsley flakes
1
teaspoon
of pepper
1
table-spoon olive oil
Optional: 1 tea spoon of ground bija or annatto seeds
A slow cooker
Instructions
Add half the salt, oregano, ground annatto powder, parsley and pepper to one side of the pork. Repeat on the other side with the same ingredients.
Place pork in the slow-cooker fat side up and set on low for 6 hours.
Add the olive oil.
After 5 hours, the pork should start browning. Check for tenderness and add time increments of 1/2 an hour of cooking if needed.
Serve with black bean soup, white rice and lettuce/tomato/avocado salad.
